A delightful medley of flavors and textures that brings the comfort of tacos into a hearty casserole.

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can black beans, drained
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 3 cups tortilla chips
  • 2 cups shredded cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Brown the ground beef in a skillet over medium heat.
  3. Toss in the taco seasoning and coat the beef.
  4. Combine the seasoned beef, black beans, corn, and diced tomatoes in a large bowl.
  5. Layer half of the tortilla chips in a baking dish, followed by the beef mixture and half of the cheese. Repeat and top with remaining cheese.
  6. Bake for 20-25 minutes until cheese is bubbly and golden.
  7. Garnish with sour cream and chopped green onions before serving.

Notes

For spicier flavor, use spicy taco seasoning or add jalapeños. Leftovers can be stored in the fridge for up to 3 days.
