A quick and flavorful Chicken and Spinach Skillet, perfect for busy weeknights, combining tender chicken, vibrant spinach, and garlic in a one-pan meal.

Ingredients

  • 2 chicken breasts
  • 2 cups fresh spinach
  • 2 tablespoons olive oil
  • 1 garlic clove, minced
  • 1/2 cup chicken broth
  • Salt and pepper to taste
  • 1/2 teaspoon paprika
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Season the chicken breasts generously with salt, pepper, and paprika.
  2. Heat 2 tablespoons of olive oil in a skillet over medium heat.
  3. Add the seasoned chicken breasts to the skillet and cook them until browned, about 6-7 minutes per side.
  4. Remove the cooked chicken from the skillet and set aside on a plate to rest.
  5. Add minced garlic to the skillet and sauté for about a minute.
  6. Pour in the chicken broth, scraping the bottom of the skillet to lift the browned bits.
  7. Add the fresh spinach and stir until wilted, about 2-3 minutes.
  8. Return the chicken to the skillet, nestling it into the spinach, and cook for another minute.
  9. Sprinkle with grated Parmesan cheese before serving, if desired.

Notes

Store any leftovers in an airtight container in the fridge for up to 3 days. To reheat, warm on the stovetop over medium heat.
