A refreshing Chicken Avocado Lime Salad that combines juicy lime, creamy avocado, and tender chicken for a bright burst of flavor.

Ingredients

Scale
  • 2 cups cooked chicken, shredded
  • 1 avocado, diced
  • 1 lime, juiced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste
  • Olive oil (optional)

Instructions

  1. Shred the Chicken: Start with your cooked chicken—whether it’s leftover rotisserie chicken or poached chicken breast. Shred it using your hands or two forks until it’s in bite-sized pieces.
  2. Chop the Vegetables: Dice the avocado carefully, making sure to avoid any brown spots. Halve the cherry tomatoes, peel and dice the red onion, and chop the fresh cilantro.
  3. Combine Ingredients: In a large mixing bowl, combine the shredded chicken, diced avocado, halved cherry tomatoes, diced red onion, and chopped cilantro.
  4. Dress the Salad: Drizzle the salad with fresh lime juice, and if you’re feeling indulgent, add a splash of olive oil.
  5. Season to Taste: Sprinkle in some salt and pepper to elevate all the flavors.
  6. Toss and Serve: Gently toss everything together, making sure not to mash the avocado. Serve immediately and enjoy the freshness of your creation!

Notes

If you have leftovers, store them in an airtight container for up to 2 days. Best enjoyed fresh to avoid avocado browning.
