A classic Denver omelet, featuring fluffy eggs folded with sautéed bell peppers, onions, and ham, perfect for a delicious breakfast or brunch.

  • 2 eggs
  • 1/4 cup diced bell peppers (red or green)
  • 1/4 cup diced onions (sweet or yellow)
  • 1/4 cup diced ham (smoked or honey)
  • 1/4 cup shredded cheese (cheddar or a blend)
  • Salt and pepper to taste
  • Butter or oil for cooking

Instructions

  1. Beat the eggs into a bowl and whisk until combined, adding salt and pepper.
  2. Heat your skillet over medium heat and add butter or oil.
  3. Sauté the diced onions and bell peppers until softened.
  4. Incorporate the diced ham and stir until heated through.
  5. Add the beaten eggs, tilting the pan to spread them evenly.
  6. Cook and lift the edges with a spatula to let uncooked egg flow underneath.
  7. Cheese the omelet with shredded cheese while the eggs are nearly set.
  8. Fold the omelet in half and slide it onto a plate to serve.

Notes

For a lighter version, substitute the whole eggs with egg whites. You can also customize with other vegetables or spices.
