A nutritious and colorful breakfast casserole packed with egg whites and vegetables, perfect for starting your day.

Ingredients

  • 4 egg whites
  • 1 cup spinach, chopped
  • 1/2 cup bell pepper, diced
  • 1/2 cup onion, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup low-fat cheese, shredded
  • Salt and pepper to taste
  • Cooking spray or olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the egg whites, chopped spinach, diced bell pepper, diced onion, halved cherry tomatoes, salt, and pepper in a large bowl. Mix gently until well combined.
  3. Grease a baking dish with cooking spray or olive oil.
  4. Pour the egg mixture into the greased baking dish and spread it evenly. Sprinkle the shredded cheese on top.
  5. Bake for 25-30 minutes until set and lightly golden.
  6. Cool for a few minutes before slicing and serving.
