A warm, inviting dessert featuring fresh blueberries encased in a flaky, rustic crust.

Ingredients

Scale
  • 2 cups fresh blueberries
  • 1 tablespoon sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1 pre-made pie crust
  • 1 egg (for egg wash)
  • 1 tablespoon milk (for egg wash)
  • Additional sugar for sprinkling

Instructions

  1. Preheat your oven to 400°F (200°C) to ensure it’s nice and hot when your galette goes in to bake.
  2. In a mixing bowl, combine the fresh blueberries, sugar, cornstarch, lemon juice, and salt. Gently toss everything together until the blueberries are well-coated.
  3. Roll out the pre-made pie crust on a baking sheet lined with parchment paper, forming a freeform circle—don’t worry about it being perfect; rustic is the goal here!
  4. Spoon the blueberry mixture into the center of the rolled-out crust, making sure to leave about a 1-2 inch border around the edges for folding.
  5. Gently fold the edges of the crust over the filling, pleating it as you go. This creates a beautiful frame for the berries and adds to the galette’s charm.
  6. In a small bowl, whisk together the egg and milk. Brush this mixture over the crust to give it a lovely golden color while baking.
  7. Sprinkle a little additional sugar on top of the crust for a hint of sweetness and sparkle.
  8. Bake in your preheated oven for 25-30 minutes, or until the crust is golden brown and the blueberry filling is bubbly and delightful.
  9. Once baked, let the galette cool for a few minutes before slicing. Serving warm is highly recommended!

Notes

This galette pairs beautifully with vanilla ice cream or whipped cream. Consider serving it with a refreshing drink.
