Ingredients

Scale
  • 1 lb chicken breast
  • 2 cups cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, sliced
  • 1 cup Kalamata olives, pitted
  • 1 cup feta cheese, crumbled
  • 2 tablespoons olive oil

  2. Prepare the Quinoa Mix: In a large bowl, combine cooked quinoa, halved cherry tomatoes, diced cucumber, sliced red onion, Kalamata olives, and crumbled feta cheese.
  3. Create the Dressing: In a small bowl, whisk together remaining olive oil, lemon juice, and a pinch of salt and pepper.
  4. Combine the Ingredients: Pour the dressing over your quinoa mixture and toss gently to coat all ingredients.
  5. Serve and Garnish: Divide the quinoa mix into bowls, topping each with sliced grilled chicken and sprinkling with chopped parsley.

Notes

These bowls can be stored in an airtight container for up to 3 days. For the best quality, store the dressing separately and combine before serving.
