A nostalgic and creamy tapioca pudding that brings back childhood memories with its unique texture and sweet vanilla flavor.

Ingredients

Scale
  • 1/2 cup small tapioca pearls
  • 2 cups milk
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 2 eggs, beaten
  • 1 teaspoon vanilla extract

Instructions

  1. Soak the tapioca pearls in water for about 30 minutes. Drain the pearls and set aside.
  2. Combine the milk, sugar, and salt in a saucepan. Heat over medium heat until warm, stirring occasionally.
  3. Stir in the soaked tapioca pearls into the warm milk mixture. Bring it to a gentle boil while stirring frequently, then reduce the heat. Let it simmer for about 10-15 minutes until the tapioca is translucent and tender.
  4. Beat the eggs in a separate bowl. Slowly add a small amount of the warm tapioca mixture to the eggs to temper them.
  5. Stir the egg mixture back into the saucepan and cook for an additional 2-3 minutes until the pudding thickens slightly.
  6. Remove from heat and stir in the vanilla extract.
  7. Allow to cool slightly before serving. You can enjoy your homemade pudding warm or chill it in the fridge.

Notes

Pairs beautifully with fresh fruit or a dollop of whipped cream. Adjust the sugar to taste.
