Ingredients

  • 4 oz dark chocolate
  • 1/2 cup unsalted butter
  • 1 cup powdered sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1 tablespoon lemon zest
  • 1/4 cup fresh lemon juice
  • Pinch of salt

Instructions

  1. Preheat the oven to 425°F (220°C) and grease four ramekins.
  2. Melt the dark chocolate and unsalted butter together in a microwave-safe bowl until smooth.
  3. Whisk together the powdered sugar, eggs, egg yolks, and vanilla extract until fluffy.
  4. Stir the melted chocolate mixture into the egg mixture until well combined.
  5. Fold in the all-purpose flour, lemon zest, fresh lemon juice, and a pinch of salt until just combined.
  6. Divide the batter evenly among the prepared ramekins, filling them about three-quarters full.
  7. Bake in the preheated oven for 12-14 minutes until the edges are firm but the center is soft.
  8. Allow the cakes to cool for 1 minute, then invert onto a plate and serve warm.

Notes

Best served warm with a dusting of powdered sugar or a scoop of vanilla ice cream. Store leftovers in an airtight container in the fridge for up to 2 days.
