A vibrant dish that combines tender chicken breasts with creamy orzo, infused with the zesty flavor of lemon, perfect for both weeknight dinners and special occasions.

  • 1 lb chicken breasts
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 lemon (zested and juiced)
  • 2 cloves garlic (minced)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper, then add to the skillet. Cook until browned and cooked through, about 6-7 minutes per side. Remove chicken and set aside.
  2. Add the minced garlic in the same skillet and sauté for about 30 seconds.
  3. Toss in the orzo and lightly toast for about 1 minute, stirring consistently.
  4. Pour in the chicken broth, lemon juice, and lemon zest, stirring well and bringing to a gentle boil.
  5. Reduce the heat and let it simmer uncovered for about 10-12 minutes, allowing the orzo to absorb most of the liquid.
  6. Slice the cooked chicken and serve over the creamy lemon orzo, garnishing with fresh parsley.

Notes

For a quicker meal, use pre-cooked rotisserie chicken. Store leftovers in an airtight container for up to 3 days.
