Delightful light and fluffy cookies bursting with zesty lemon flavor and creamy ricotta.

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Creaming together the ricotta cheese and softened butter until smooth.
  3. Add the granulated sugar and mix until fluffy.
  4. Mix in the large egg, lemon zest, and lemon juice.
  5. Combine the flour, baking powder, baking soda, and salt in another bowl.
  6. Gradually add the dry ingredients to the wet mixture.
  7. Drop spoonfuls of dough onto a parchment-lined baking sheet.
  8. Bake for 12-15 minutes until edges are golden.
  9. Let cookies cool on a wire rack and dust with powdered sugar.

Notes

For intense flavor, add more lemon zest. Store cookies in an airtight container for up to 5 days.
