A delightful Thai dessert featuring glutinous rice served with a creamy coconut sauce and ripe mango.

Ingredients

Scale
  • 1 cup glutinous rice
  • 1 1/2 cups coconut milk
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 2 ripe mangoes, peeled and sliced
  • Sesame seeds or mung beans for garnish (optional)

Instructions

  1. Rinse the glutinous rice in cold water until the water runs clear, then soak it for at least 4 hours or overnight.
  2. Steam the rice in a steamer basket lined with cheesecloth or banana leaves for about 25-30 minutes until cooked and tender.
  3. Prepare the coconut sauce by combining 1 1/4 cups of coconut milk, sugar, and salt in a saucepan over medium heat until the sugar dissolves.
  4. Reserve about 1/4 cup of the coconut milk mixture for drizzling later.
  5. Mix the remaining coconut milk into the freshly steamed rice and allow it to rest for about 30 minutes.
  6. Assemble by scooping the sticky rice onto a plate, topping with mango slices, drizzling reserved coconut milk, and garnishing if desired.

Notes

For best results, use full-fat coconut milk and avoid breaking rice grains when mixing.
