A delightful layered dessert featuring a crumbly biscuit base, rich caramel filling, and a smooth dark chocolate topping.

Ingredients

  • 200g digestive biscuits
  • 100g unsalted butter, melted
  • 397g can of sweetened condensed milk
  • 150g dark chocolate, chopped
  • 75g unsalted butter
  • 3 tablespoons golden syrup
  • Salt, to taste

Instructions

  1. Preheat the oven to 180°C (350°F). Grease and line an 8-inch square baking tin with parchment paper.
  2. Crush the digestive biscuits into fine crumbs and mix with the melted butter.
  3. Press the mixture firmly into the bottom of the prepared tin to form a sturdy base.
  4. Bake the base for 10 minutes until lightly golden, then allow to cool in the tin.
  5. Combine the sweetened condensed milk, chopped dark chocolate, butter, and golden syrup in a saucepan over low heat.
  6. Cook until smooth and thick, stirring constantly.
  7. Pour the chocolate mixture over the cooled biscuit base and spread it evenly.
  8. Chill the combined mixture at room temperature, then set in the fridge for at least 2 hours.
  9. Remove from the tin and cut into squares before serving.

Notes

Store any leftover Millionaire Shortbread in an airtight container in the fridge for up to a week or freeze for up to a month.
