Indulge in the creamy richness of these Oreo Cheesecake Bars, combining the delightful crunch of Oreo cookies with smooth cheesecake.

Ingredients

Scale
  • 1 package Oreo cookies
  • 1/4 cup butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/2 cup Oreo cookie crumbs

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9 inch baking pan to prevent sticking.
  2. Crush the Oreo cookies to make fine crumbs. In a bowl, mix the crumbs with melted butter and press the mixture firmly into the bottom of the prepared pan to form a crust.
  3. Beat the softened cream cheese until smooth. Add in the sugar and vanilla extract, continuing to beat until everything is nicely combined.
  4. Add the eggs one at a time, mixing well after each addition to ensure the batter remains smooth and creamy.
  5. Mix in the sour cream until the mixture is completely smooth.
  6. Pour the cream cheese mixture over the crust in the baking pan and spread it out evenly.
  7. Sprinkle the extra Oreo cookie crumbs on top of the cheesecake layer.
  8. Bake for 30-35 minutes, or until the edges are set and the center is slightly jiggly.
  9. Let it cool to room temperature, then refrigerate for at least 4 hours before cutting into bars.
