A refreshing Raspberry Lemon Sorbet that captures the essence of summer with its tart and sweet flavors.

Ingredients

  • 2 cups raspberries (fresh or frozen)
  • 1 cup lemon juice (freshly squeezed)
  • 3/4 cup sugar
  • 1 cup water
  • 1 tablespoon lemon zest

Instructions

  1. Create the sweet base: In a saucepan, combine sugar and water, and heat until the sugar is fully dissolved. Once it’s all melted together, set it aside to cool.
  2. Blend the fruity goodness: Toss the raspberries, freshly squeezed lemon juice, and lemon zest into your blender. Blend until smooth.
  3. Strain away seeds: Strain your raspberry mixture through a fine-mesh sieve to ensure a silky-smooth sorbet.
  4. Mix it all together: Combine the silky raspberry mixture with the cooled sugar water. Stir gently to blend.
  5. Freeze for perfection: Pour the mixture into a shallow dish and freeze for about 4 hours, stirring every 30 minutes.
  6. Serve and savor: Once firm and fluffy, scoop the sorbet into bowls and enjoy!

Notes

Store leftovers in an airtight container in the freezer for up to a week. If it becomes too hard, let it sit at room temperature before scooping.
