A refreshing, dairy-free raspberry sorbet that’s simple to make and bursting with flavor, perfect for warm days.

Ingredients

  • 2 cups fresh raspberries
  • 1 cup sugar
  • 1 cup water
  • 1 tablespoon lemon juice
  • Pinch of salt

Instructions

  1. Create the Sweet Syrup: In a saucepan, combine the sugar and water. Bring to a boil, stirring until the sugar has fully dissolved. Remove from heat and let it cool down.
  2. Puree the Raspberries: In a blender, puree the fresh raspberries until smooth. Strain through a fine mesh sieve to remove the seeds.
  3. Combine the Flavors: In a mixing bowl, combine the raspberry puree, cooled sugar syrup, lemon juice, and a pinch of salt. Stir until well integrated.
  4. Churn It Up: Pour the mixture into your ice cream maker and churn until it reaches a soft-serve consistency.
  5. Freeze and Firm Up: Transfer the mixture to a lidded container and freeze for at least 4 hours before serving.

Notes

Serve garnished with mint or whole raspberries. Can be stored in the freezer for up to 2 weeks.
