Crispy, golden egg rolls filled with a delightful blend of chicken, black beans, corn, and spices – a perfect snack or appetizer.

  • 1 cup cooked chicken, shredded
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup diced bell pepper
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1012 egg roll wrappers
  • Oil for frying

Instructions

  1. Combine ingredients: In a large bowl, combine the cooked chicken, black beans, corn, bell pepper, cheese, cumin, chili powder, salt, and pepper. Mix well until all ingredients are evenly distributed.
  2. Prepare egg roll wrappers: Lay an egg roll wrapper on a clean surface, corner pointing toward you, and place about 2-3 tablespoons of the filling in the center.
  3. Wrap it up: Fold the bottom corner over the filling, then fold in the sides. Continue rolling tightly toward the top corner to secure the filling inside.
  4. Fry to perfection: Heat oil in a deep skillet over medium heat. Carefully place the egg rolls in batches, frying them until golden brown and crispy—about 3-4 minutes per side.
  5. Drain and serve: Once fried, drain the egg rolls on paper towels to remove excess oil. Serve hot with your favorite dipping sauce.

Notes

For added flavor, pair with zesty salsa, avocado crema, or ranch dressing. Leftover egg rolls can be stored in an airtight container and reheated in the oven or air fryer.
