Colorful and flavorful steak fajita bowls with tender steak, fresh bell peppers, and a satisfying base of rice or quinoa.

Ingredients

  • 1 lb steak (sirloin or flank steak)
  • 2 bell peppers (red and green), sliced
  • 1 onion, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon fajita seasoning
  • Salt and pepper to taste
  • Cooked rice or quinoa for serving
  • Optional toppings: avocado, sour cream, cheese, cilantro

Instructions

  1. Heat olive oil in a skillet over medium-high heat until it’s glistening.
  2. Season the steak generously with fajita seasoning, salt, and pepper. Let it soak up those flavors.
  3. Place the steak in the hot skillet and cook for 3-4 minutes on each side or until it reaches your desired doneness. Once cooked, remove it from the skillet and let it rest for a few minutes to retain its juices.
  4. In the same skillet, add the sliced bell peppers and onion. Sauté them in the flavorful oil, stirring occasionally, until they’re softened and slightly caramelized, about 5-7 minutes.
  5. Slice the rested steak against the grain into thin strips. Serve the sliced steak in bowls over a bed of rice or quinoa, topped generously with the sautéed peppers and onions.
  6. Finish off your bowls with all the optional toppings you love – avocado slices, a dollop of sour cream, shredded cheese, and a sprinkle of fresh cilantro.

Notes

You can customize the toppings and enjoy with warm tortillas, sides of corn, salsa, or salad.
