A vibrant and flavorful dish featuring seared steak, sautéed vegetables, and a base of rice or quinoa, garnished with fresh cilantro.

Ingredients

  • 1 lb steak (such as flank or skirt steak)
  • 2 tablespoons olive oil
  • 1 bell pepper (sliced)
  • 1 onion (sliced)
  • 2 cloves garlic (minced)
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Cooked rice or quinoa
  • Fresh cilantro (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Heat the olive oil in a pan over medium-high heat.
  2. Season the steak generously with chili powder, cumin, salt, and pepper.
  3. Sear the seasoned steak in the pan for 5-7 minutes per side, then remove and let it rest.
  4. Sauté the bell pepper, onion, and garlic in the same pan until softened, about 5 minutes.
  5. Slice the rested steak thinly against the grain.
  6. Assemble the bowls with a base of rice or quinoa, topped with sautéed vegetables and sliced steak.
  7. Garnish with fresh cilantro and serve with lime wedges.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet with a splash of water or broth.
