Delightful summer bars with a buttery graham cracker crust and a zesty strawberry-lemon filling.

Ingredients

  • 1 cup of graham cracker crumbs
  • 1/4 cup of sugar
  • 1/2 cup of unsalted butter, melted
  • 1 cup of fresh strawberries, pureed
  • 1/2 cup of fresh lemon juice
  • 1 cup of sugar (for filling)
  • 4 large eggs
  • 1/4 cup of all-purpose flour
  • 1/2 teaspoon of baking powder
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. Combine the graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl.
  3. Press this mixture firmly into the bottom of the prepared baking dish.
  4. Bake the crust for 10 minutes, then remove it from the oven and allow it to cool slightly.
  5. Whisk together the strawberry puree, lemon juice, 1 cup of sugar, and eggs until smooth.
  6. Sift in the flour and baking powder, folding gently to combine.
  7. Pour the filling over the baked crust, ensuring even coverage.
  8. Bake for an additional 25-30 minutes, until the filling is set and slightly golden on top.
  9. Cool completely before dusting with powdered sugar and slicing into bars.

Notes

Serve chilled, with whipped cream or vanilla ice cream for the perfect summer treat. Store leftovers in an airtight container for up to a week.
