A hearty and comforting turkey sausage pasta dish, perfect for weeknights or special gatherings, featuring fresh vegetables and a savory flavor profile.

Ingredients

Scale
  • 8 oz penne pasta
  • 1 lb turkey sausage, sliced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup spinach
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Bring a pot of salted water to a boil and cook the penne pasta according to package instructions. Once al dente, drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until they’re softened and fragrant, about 3-4 minutes.
  3. Add the sliced turkey sausage to the skillet, cooking until it’s nicely browned and cooked through, about 5-7 minutes.
  4. Stir in the diced tomatoes (with their juice) and bring everything to a gentle simmer. Let the flavors meld together for about 5 minutes.
  5. Add the cooked penne and spinach to the skillet, mixing well until the spinach wilts and everything is heated through.
  6. Finally, season with salt and pepper to taste. Serve hot, generously topped with grated Parmesan cheese. Enjoy your delicious creation!
