A delicious and healthy twist on tacos, these Turkey Taco Stuffed Zucchini are packed with lean turkey, black beans, and cheese, making them a comforting, low-carb meal.

Ingredients

  • 2 medium zucchinis
  • 1 pound ground turkey
  • 1 packet taco seasoning
  • 1 cup diced tomatoes
  • 1 cup shredded cheese
  • 1/2 cup black beans, drained and rinsed
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the zucchinis by cutting them in half lengthwise and scooping out the seeds.
  3. Cook the ground turkey in a skillet over medium heat until browned, about 5-7 minutes.
  4. Add the taco seasoning, diced tomatoes, and black beans. Season with salt and pepper, and let simmer.
  5. Stuff each zucchini half with the turkey mixture.
  6. Top with shredded cheese.
  7. Bake in the preheated oven for 20-25 minutes until the zucchini is tender and cheese is melted.
  8. Garnish with chopped cilantro before serving.
