A light, fluffy cake with whipped cream and fresh berries, perfect for any celebration.

Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup milk
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Fresh berries for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Combine the all-purpose flour, sugar, baking powder, and salt in a large bowl.
  3. Add the softened unsalted butter, milk, eggs, and vanilla extract. Beat on medium speed for 2 minutes until smooth.
  4. Divide the batter evenly between the prepared pans and smooth the tops.
  5. Bake in the preheated oven for 25-30 minutes, or until a toothpick comes out clean.
  6. Whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
  7. Spread a layer of whipped cream between the cooled cake layers and top with more whipped cream.
  8. Garnish the top of the cake with fresh berries.

Notes

For extra flavor, infuse whipped cream with citrus zest. Store leftovers in an airtight container in the refrigerator for up to 3 days.
