A moist and delicious chocolate cake made with grated zucchini, perfect for dessert or a sweet snack.

  • 2 cups grated zucchini
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Combine the grated zucchini, sugar, vegetable oil, eggs, and vanilla extract in a mixing bowl. Mix well until fully combined.
  3. Mix together the flour, cocoa powder, baking soda, baking powder, salt, and cinnamon (if using) in another bowl.
  4. Add the dry ingredients to the wet mixture, mixing just until combined. Be careful not to overmix; a few lumps are okay!
  5. Fold in the chocolate chips, ensuring they’re evenly distributed in the batter.
  6. Pour the batter into the prepared baking pan and spread it evenly with a spatula.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool in the pan for a few minutes before transferring it to a wire rack to cool completely before serving.

Notes

For a richer flavor, serve with vanilla ice cream or whipped cream. Be sure to squeeze excess moisture from the grated zucchini using a kitchen towel to keep the cake fluffy.
